The gyuto is intended as a meat and fish filleting knife which I make in two popular sizes
Knives in my 'Seiyo' range are a fusion of east and west traditional knife designs. They have the very popular Japanese blade shapes but a full tang for greater strength.
Handle scales are laid on fibre liners and fixed with my unique 'hallmark' mosaic pins.
