Classic Gyuto No.6
This version of my Classic Gyuto has a 230mm long blade made in differentially hardened high-carbon steel; the blade cheeks have been left with a hand forged finish.
Differential hardening is a method used for a harder, sharper cutting edge and a relatively softer spine to ensure toughness in the blade.
The handle is made from stabilised Curly Birch with a Red Gidgee bolster and has my signature ‘hallmark’ mosaic pin set into the end of the handle.
